Menu Making

It was brought to my attention today that I am not making my menus any more. This was true... I had a newborn in the house and I wasn't making them. I have gotten better recently, so I will start posting them again. Also - I need to start dieting again soon and this will help keep me on track!

Monday - Curried Coconut Chicken

Tuesday - Tuna Casserole

Wednesday - Whole roasted chicken

Thursday - Fried Rice

Friday - Enchiladas (from the left overs of the roasted chicken)

Saturday - Pizza!

Sunday - Jambalaya

  1. Seriously...you should email me your recipes and menu plans. I need to lose weight, and just cant get menu planning down, plus new ideas would be great!

  2. LOL - my menu is not geared toward weight loss right now, but it will be soon and then it will be really boring! I can start adding recipes with the menu though and calories, when it is geared that way.

  3. Your so great... I need to get back on board with this, its just makes things easier. Never had the Jambalaya before, might have to try it, i see many recipes online to choose from.

  4. Heather the Jambalaya is awesome. I make it with Hilshire turkey kilbasa (on sale this week at safeway and with a coupon), the rice I use is the rice sides by Knorr and those were on sale for $.88 a few weeks ago (plus a coupon, of course), the chicken I buy on sale and freeze ($1.67 this weekend at Safeway), I don't use shrimp to save money and I add a can of diced tomatoes to this (on sale - of course).

    If you have a well stocked pantry and freezer then all of this becomes easier. If you buy things on sale and with coupons and have a good stock, then all you need to do is buy fresh food to go with it. That's what makes your budget work and that's how I make my menu's.

    The first thing I think when I make a menu is - what do I have in the fridge that needs to be used (because it's perishable and I hate throwing money away)?
    Then - what do I have in the pantry/freezer that needs to be used?
    Then - what's on sale that could go with it?
    And finally - the fresh produce or small items needed to finish the recipe.
